“COVENANT” BROWNIES

A few years before changing our diet over to whole foods I was inspired by a close friend who had discarded chocolate for over twenty years. Her reasoning was that if she was going to carry the message of the Restoration revealed by the prophet Joseph Smith then she needed to change her diet to reflect the message and eat that which glorified God. She then made a personal covenant to never lay a finger upon chocolate again. I was so touched by her choice in choosing to glorify Him through her eating and commitment that I, too, made the same covenant five years ago. Chocolate has always been a weakness of mine and giving it up was the perfect place to start our journey in learning how to eat as He has asked us to. Since that day I have never once been tempted to break this personal covenant I made.  

IN SEARCH OF A NEW RECIPE

However, my daughter decided that we still needed to have brownies and so she spent a few months trying to find a brownie recipe that was healthy as well as delicious. Working with carob and its bitter taste was a hard adjustment. After many attempts, she finally created a wonderful version I can eat guilt-free!

INGREDIENTS

1 ½ cups whole wheat flour
1 ¾ cup sugar (organic sugarcane, or coconut sugar)
3 Tbsp Carob Powder 
3 Tbsp Cocao Powder
½ tsp Sea Salt
1 cup Coconut oil or Olive oil
4 eggs (from the coop if possible)
2 tsp vanilla

INSTRUCTIONS

Preheat the oven to 350
Grease pan
Add all ingredients together
(If using coconut oil- melt the oil and pour it in)
Bake for 35 to 40 minutes

Julie Smith is the Education Director for the Joseph Smith Foundation. She is the former owner of the Glenn J. Kimber Academy in Lehi, Utah. Julie served as a regional trainer—establishing 18 schools in Arizona, Idaho, and Utah. She is a certified teacher for The Thomas Jefferson Center for Constitutional Restoration (TJC) and taught the Making of America seminars written by W. Cleon Skousen and Glenn J. Kimber. Some of her children also traveled across the nation, assisting in teaching during these seminars. Julie taught history and Book of Mormon classes for 10 years. Julie is the mother of 5 children and grandmother to 7. She homeschooled for over 27 years, working through family challenges including pornography addiction, testimony faith crises, and teenage rebellion. She writes and teaches on strengthening the family, working with troubled youth, practically applying the teachings of scripture and the Prophet Joseph Smith, and celebrating higher standards. In her spare time, Julie also enjoys gardening, managing her .5-acre homestead, and hosting Sunday dinners with her family! Her home is a revolving door of guests and friends as her family hosts cultural celebrations and teaching events.
