    AUTUMN GARDEN SALSA

September 20, 2021 If I learned one thing: homemade salsa is so much better than any kind you can find in a store. The best salsa is made with fresh ingredients. This recipe is quick and easy to make in just minutes. Our family loves salsa SO much that every year we have to plant the ingredients for this recipe.  INGREDIENTS 6 Large Tomatoes 1 Green Pepper 1 Onion 3 tbsp. of Apple Cider Vinegar 6 tbsp. Water 1 tbsp. Sugar ¼ tsp. Salt 1 tsp. Basil 1 tsp. Garlic Salt 1 tsp. Parsley INSTRUCTIONS  If you prefer a spicy salsa, you can adjust the level of spice to your…

    “COVENANT” BROWNIES

A few years before changing our diet over to whole foods I was inspired by a close friend who had discarded chocolate for over twenty years. Her reasoning was that if she was going to carry the message of the Restoration revealed by the prophet Joseph Smith then she needed to change her diet to reflect the message and eat that which glorified God. She then made a personal covenant to never lay a finger upon chocolate again. I was so touched by her choice in choosing to glorify Him through her eating and commitment that I, too, made the same covenant five years ago. Chocolate has always been a…

    MIX IT WITH THE OIL!

During the week of Unleavened Bread, we are told to rid our homes of any type of leavening agents and to also not eat anything that contains it. This is when flatbread is eaten instead— representing Israel leaving Egypt in as haste as there was no time to wait for the bread to rise. Usually, when making bread you need only a very small amount of yeast (leaven) to make it. Without yeast, it would be considered flatbread. The yeast or leavening agent is what makes it rise and become puffed up. This is symbolic of our own pride and sin. THE IMPORTANCE OF OIL This year we learned the…

    BEANS AND RICE OH MY!

March 2020 with its many shutdowns happening we decided to try a dinner menu that would sustain us and the family budget if things continue as they were in the country. The summer before, Mark, our son-in-law introduced to us the thought of eating beans and rice daily and how this is a staple in many countries, and how he had experienced this ‘menu’ on his mission. So the idea was planted and now was the time to experiment. Weekly, we have different variations of beans and rice. We usually will eat this 5 days out of the week. Sometimes it is all mixed together with a tortilla on the…

    NOTHING “STACKS” UP LIKE PANCAKES

Take a great recipe, some fundamental pancake-flipping skills, and a bunch of toppings and you have yourself a happy family standing around the kitchen island waiting to be served a stack with syrup dripping down the sides.  In my home as a young child, the same excitement existed as we enjoyed these sweet-milk pancakes daily it seems. There it would lay in the pan bubbling and sizzling, so thick and good, it was a delicious sight to look on. My mother would always be experimenting with different types of flour, and if memory serves me right we even tried brown rice flour. Pancakes were such a regular breakfast item that my…

    SKIP THE STORE-BOUGHT GRANOLA

Breakfast is something we do not always eat together as a family— as many of us have different schedules or some of us enjoy sleeping in a little longer, but what we all have come to enjoy is this delicious easy granola recipe. We love it because it is not sticky, or too hard. The texture is perfect for that bowl of cereal with almond milk!  Tradition is that every Monday my girls or I will create a new batch of granola for the week. Each time someone makes the recipe it may be a little different depending on what you might find in the pantry and who is cooking…
